Barbecued Orange Chicken
1/2 cup white wine vinegar
1/4 cup tomato paste
1/4 cup vegetable oil
3 tablespoons grated orange rind (zest)
1/4 cup orange juice, frozen concentrate or fresh
2 1/2 lbs. chicken pieces

Prepare your recipe
In a mixing bowl, mix together first 5 ingredients
until smooth and set aside.
Place chicken on grill and cook for 12 minutes.
Turn chicken and grill an additional 10 minutes.
Then:
Brushing chicken pieces with sauce and turning occasionally,
cook for additional 10 minutes,
or until juices run clear.

For a tasty economical meal use chicken legs and thighs.
Serve with rice and vegtables.


Quick and Easy Homemade Pie
Graham Cracker Crust Apple Pie
5 cups sliced apples (peeled cored)
3/4 cup sugar
3/4 cup water
1/2 tsp. cinnamon
1/4 tsp nutmeg
1 tbsp. lemon juice
2 tbsp. cornstarch
1 tbsp. butter
dash of salt
1- 9 inch graham cracker pie crust
Prepare
Combine sugar, nutmeg, cinnamon and salt in sauce pan.
Stir in 1/2 cup of water, apples and lemon juice.
Stir over medium heat until mixture comes to boil.
Cover and simmer on low heat 10 mins.
Stir occasionally or until apples are starting to get tender.
Mix cornstarch with remaining water add to apple mixture
stir until thickened , stir in butter and pour into pie crust.
Bake in preheated 350 degree oven for 30 mins.
