CHICKEN CASSEROLE WITH PINEAPPLE RECIPE

Recipe ingredients:
4 tbsp. butter
2 lb. chicken leg quarters
Salt to taste
1 can cubed pineapple
1/4 cup orange juice
1/4 cup toasted sliced almonds
1/2 c. pineapple juice
2 cups cooked rice

Preparation
Boil chicken quarters in pot until ready to fall from bone.
Remove chicken meat and cut into bite size pieces.
Salt to taste.
Drain and reserve juice from canned pineapple.
Glaze chicken in a casserole dish with pineapple juice and
orange juice.
Cover and bake at 350 degrees for 20 minutes.
Add the pineapple cubes and almonds.
Uncover and bake 5 minutes.
Serve over rice
Makes 4 servings.

The English word pineapple was first recorded in 1398,
it was used to describe pine cones.
The pineapple is actually not one fruit,
the diamond-shaped segments are
more than a hundred individual seedless fruits.
Pineapple is a good source of manganese,
Vitamin B1 and Vitamin C.
To tell if a grocery store pineapple is ripe
make sure the eyes or markings on the fruit,
are about the same size from top to bottom.
It should be a golden yellow color.
If it smells sweet, then it's ready.
If it has no smell, it's not ripe.
