Vanilla Frosted Pumpkin Cupcakes Recipe
Recipe ingredients:
1 box spice cake mix
1 can (15 oz.) pumpkin
3 large eggs
1/3 cup vegetable oil
1/3 cup water
Vanilla frosting:
1/4 cup butter
2 cups confectioners' sugar
1/4 cup milk
1 tsp. vanilla
Prepare your recipe
Preheat oven to 350F degrees.
Grease 24 muffin cups or use wax paper cups.
Blend cake mix, pumpkin, eggs, oil and water
in large mixing bowl.
Beat on medium speed for 2 minutes.
Pour batter into prepared muffin cups, filling 3/4 full.
Bake for 20 to 25 minutes or until wooden toothpick
inserted in center comes out clean.
Cool in muffin pan for 10 minutes.
Remove to wire racks to cool completely.
Vanilla frosting:
Combine all ingredients in mixing bowl
Beat at low until well blended.
Beat at high speed until smooth and creamy.
Top cupcakes with frosting.
