Healthy Budget Shepherd's Pie Recipe

Recipe ingredients:
1 lb lean ground beef
1 1/2 cups low sodium beef broth
2 bay leaves
1 cup sliced carrots
1 sliced onion
2 cups frozen corn
1 1/4 tbsp flour
3 cups mashed potatoes


Prepare your recipe
Brown ground beef in large skillet and drain grease.
Add 1 cup broth, pepper and bay leaves.
Cover and simmer for 30 minutes.
Add carrots and onions.
Cover and simmer until carrots begin to get tender.
Add peas and corn and continue to simmer until
all vegetables are cooked.

Preheat oven to 375 degrees.
Combine remaining 1/2 cup broth and flour.
Mix until smooth.
Add to beef and vegetables.
Simmer until slightly thickened.
Place beef mixture in bottom of casserole dish.
Top with mashed potatoes.

Bake 10 minutes
