Rice and Spinach Recipe
Recipe ingredients:
1 cup white rice
1 1/2 cup water
1/2 tsp salt
3 tbsp olive oil
1 jalapeno pepper (seeded and chopped)
1 clove garlic (chopped)
1 med onion (chopped)
1 bell pepper (chopped)
1/2 tsp turmeric
1/2 tsp salt
6 oz raw spinach (chopped)
2 tsp lemon juice
Prepare your recipe
Bring water to boil with salt, add the rice.
Cover and cook for 20 minutes, turn off heat
and let sit 5 minutes.
While the rice is cooking,
Heat oil in skillet, add the chopped jalapeno
and garlic, cook 2 minutes.
Add onion and bell pepper
and spices and cook until onions and peppers
are golden and soft.
Stir in the spinach and cook until
the spinach is wilted.
Stir in the cooked rice, and heat 2 minutes.
Add lemon juice and serve.
